José "Pipo" Villena – Passion for soulful cuisine

At LA NENA, there are no walls between the kitchen and the tables.

Behind every dish we serve is José “Pipo” Villena, our executive chef — a man who doesn’t hide behind pots and pans. He enjoys stepping out, greeting guests, sharing stories, and listening to what each person feels when tasting his creations.

With more than twenty years of experience, Pipo brings with him a journey that spans Peru, Mexico, Italy, and Spain, blending classical techniques with a style that’s entirely his own — approachable, relaxed, and authentic. His education at renowned schools such as D’Gallia (Lima), Ambrosía (Mexico City), and the University of Modena (Italy) is reflected in his deep respect for ingredients, seasonality, and the history each product carries.

For him, cooking isn’t just about serving food — it’s about sharing moments. He proves it in every detail: in the way he speaks with guests about a freshly served dish, explains the origin of an ingredient, or defends the belief that the best cooking is done slowly, honestly, and with love.

Today, Pipo leads our kitchen with a clear conviction: gastronomy doesn’t need artifice — it needs people who cook with passion and build connections through the table. In every bite, there’s a piece of that philosophy turned into flavor.

Detrás de cada plato que servimos hay una historia, un viaje, y sobre todo, una persona: José Villena. Chef ejecutivo, formador y apasionado por los sabores auténticos, José lleva más de 20 años cocinando con el corazón, combinando técnicas aprendidas en Perú, México, Italia y España con una sensibilidad muy suya: cercana, natural y llena de sabor.

Su formación en escuelas como D’Gallia en Lima, Ambrosía en Ciudad de México y la Universidad de Módena en Italia, se refleja no solo en su dominio técnico, sino en el respeto profundo por los ingredientes, las temporadas y las manos que cultivan lo que llevamos a la mesa.

A lo largo de su recorrido ha liderado cocinas, creado espacios propios y enseñado a nuevas generaciones, siempre con la convicción de que la buena cocina no necesita pretensiones, solo productos honestos, procesos cuidados y mucho amor.

Hoy, José nos acompaña en este espacio donde la comida se prepara como antes: con calma, con intención, y con un fuerte lazo a nuestras raíces. Cada plato que llega a tu mesa busca ser una experiencia genuina, hecha a mano y pensada para compartir.
